Lemon Dill Hummus Crab Cakes
Makes 12 Prep Time: 15 minutes Cook Time: 20 minutes
What you will need...
1 Tbsp 15 mL
2 Tbsp 30 mL
2 Tbsp 30 mL
1 x 227 g/8 oz
2 cups 500 mL
tin of crab meat
dill, chopped
green onions, thinly sliced
red pepper, diced
Summer Fresh Lemon Dill Hummus
Italian bread crumbs
cooking oil
What you will do...
Preheat oven to 375F (190C) and line a baking sheet with parchment paper. Blend crab meat with dill, onions, red peppers and Summer Fresh Lemon Dill Hummus.

Shape the mixture into balls, then roll on a plate of Italian bread crumbs until well coated, then flatten into a puck shape. Heat a thin layer of cooking oil in a frying pan on medium-high. Brown each cake 1 minute per side.

Bake in oven for 5 minutes per side. Remove from oven and serve with Lemon Dill Hummus on the side.

TIP: Kick it up a notch with Summer Fresh Spicy Hummus instead of Lemon Dill hummus.
