1 x 227g (8 oz) Summer Fresh Roasted Red Pepper Dip
2 lbs (908g) Lean ground beef
3 Tbsp Bread crumbs
12 baby spinach leaves
12 Slices Brie cheese
1 egg
6 grape tomatoes, halved
Salt & Pepper, to taste

1. In a large mixing bowl combine Summer Fresh Baba Ghanouj ground beef, bread crumbs, egg, and salt & pepper. Form into small burger patties or meatballs.
2. Brown in a frying pan on medium heat and transfer to baking sheet. Bake in a 350°F (180°C) oven for 10 - 15 minutes, or until cooked to an internal temperature of 160°F (70°C).
3. Remove from oven and transfer to serving platter. Add to each mini burger a slice of brie, baby spinach leaf, dollop of Summer Fresh Roasted Red Pepper Dip, and half grape tomato.
