Fill 8 glasses each with 2 Tbsp of Summer Fresh Baba Ghanouj.
Cut baby Romaine heart lengthwise into 8 pieces, and insert one into each glass.
Lay out the prosciutto slices on a sheet of parchment paper or a cutting board. Roll one breadstick into each slice of prosciutto, and insert into each glass. Add a lemon wedge to each glass, and serve on a platter.
