In a bowl, combine Hummus & vegetables; mix well. Lay out wonton wrappers. Put about 1 tsp. of mixture on center of each wrapper. Dampen edges of wonton wrappers with water, and fold into half-moon shape. Press around the edges to seal.
In large skillet, heat canola oil (about 1/2” deep) to medium high. Gently, and carefully, place wontons in oil. Fry until bubbly and golden, and then turn over and repeat for other side. Remove and drain on paper towels, then transfer to a platter. Serve with a mixture of soy sauce and edamame hummus in a small bowl for dipping.
