Tzatziki Beet Slices
1 x 227g (8 oz) Summer Fresh Tzatziki
3 Large beets, sliced, roasted
1/3 Cup Goat cheese
1 Tbsp Fresh dill, chopped
2 Tbsp Pistachios, chopped

1. Cut beets in 1/4” thick slices and lay out on baking sheet. Roast in a 425°F (218°C) oven for 10 - 20 minutes, until tender. Remove beets from oven, allow to cool, and peel.

2. Mix Summer Fresh Tzatziki and goat cheese in a mixing bowl until well combined.

3. Arrange beet slices on serving dish. Top each slice with a dollop of Tzatziki & goat cheese mixture. Sprinkle each with chopped pistachios and chopped dill.

Makes about 20 to 24 slices - Enjoy!
