Mini Avocado Hummus Quesadillas
2 x 227g (8 oz) Summer Fresh Avocado Hummus
1 pkg Small tortillas
125 mL (½ cup) Onions, sliced & sautéed
125 mL (½ cup) Red, green & yellow peppers, sliced & sautéed
125 mL (½ cup) Monterey Jack cheese, shredded
Cilantro, chopped, to taste

Arrange small tortillas on a piece of parchment paper. Brush one side of each tortilla with oil, then turn all the tortillas over.

On the non-oiled side, add 30 mL (2 oz) of Summer Fresh Avocado Hummus and spread evenly. Top each with an equal amount of onions, peppers, and cheese, then fold each tortilla over to make semi-circle quesadillas.

Transfer quesadillas to a lightly greased baking tray, and bake in a 190ºC (375ºF) oven for 2-3 minutes per side. Remove and serve with extra Avocado Hummus for dipping.
