Red Pepper Hummus Phyllo Cigars
2 x 227g (8 oz) Summer Fresh Roasted Red Pepper Hummus
12 sheets Phyllo dough
30g (2 Tbsp) Butter, melted
90g (3 Tbsp) Goat cheese
24 Roasted red pepper strips, cut 1.5 cm (˝”) wide

In a large bowl, mix Summer Fresh Roasted Red Pepper Hummus and crumbled goat cheese until well combined.

Cut each phyllo sheet into 4 squares. Brush one side of 24 of the squares with melted butter. Use the remaining 24 squares to place on top of each buttered square so that you will have 24 total phyllo “sandwiches”.

Spread about 1 Tbsp of hummus and goat cheese mixture along the long edge of each phyllo square, about 1.5 cm wide, then top the mixture on each phyllo square with one strip of roasted red pepper. Roll up each phyllo square to make a tube. Tuck in the ends.

Bake phyllo cigars in a 215°C (425°F) oven for about 20-30 minutes until brown and crispy. Remove from oven and serve.
